Grace Curried Broad Beans with Mixed Vegetables

Ingredients

For 4 people ()

  • 2 tablespoons Grace Vegetable Oil
  • 2 teaspoons scotch bonnet pepper, chopped
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 teaspoon Indian curry powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 cup plum tomato, diced
  • 1 teaspoon salt
  • 2 stalks escallion, chopped
  • 0.5 packet Grace Coconut Milk Powder
  • 1 can Grace Mixed Vegetables
  • 0.5 teaspoon garam masala
  • 1 can Grace Broad Beans

Directions

  1. Heat Grace Vegetable Oil in a sauce pan over medium flame.  Add scotch bonnet pepper, half the garlic and onion and saute until lightly browned.
  2. Add Indian curry powder, black pepper, paprika and the remainder of the garlic and onion.
  3. Mix in the tomato, salt and escallion and cook for about one minutes.
  4. Combine Grace Coconut Milk Powder with liquid from the Grace Broad Beans and mix well before adding to the simmering mixture.  Cook for about 2 minutes.  Stir in the Grace Mixed Vegetables, garam masala and Grace Broad Beans.  Cover and allow to simmer for 2 minutes.

    Recipe Note: Frozen Mixed Vegetables may also be used.

    To Serve:  Serve with Roti or Fried Dumplings.
