Ingredients

For 2 people ()

  • 0.25 cup Grace White Vinegar
  • 1 cup water
  • 2 pounds whole fish, cleaned and dressed
  • 2 teaspoons salt
  • 2 teaspoons white pepper
  • 1 teaspoon garlic powder
  • 1 pound yam, peeled, washed
  • 4 ounces Grace Fish and Meat Sauce

Directions

  1. Pre-heat oven to 180°C/350°F and grease baking tray.
  2. Wash fish in a solution of vinegar and water.
  3. Season fish with salt, pepper and garlic powder, set aside.
  4. In a large pot boil yam until tender then drain and crush.
  5. Stuff crushed yam into cavity of fish. Secure opening by sewing with needle and thread or use a skewer.
  6. Place on greased baking tray and bake for 40 minutes.
  7. Baste at regular intervals using Grace Fish and Meat Sauce, to retain moisture and improve flavour until done.

    METHOD NOTE: Use a sterilized needle to secure fish cavity.

    TO SERVE: Serve with steamed bammy or your favourite steamed vegetable.
