- 1 cup Grace Vegetable Oil
- 1 cup tofu, diced
- 3 medium Irish potatoes
- 0.25 teaspoon mustard seeds
- 1 teaspoon ginger, crushed
- 6 whole plummie tomatoes, diced
- 0.25 teaspoon cumin seeds
- 0.25 teaspoon Grace Hot Pepper Sauce
- 0.25 teaspoon salt
- 2 teaspoons turmeric powder
- 0.25 cup water
Directions
- Heat Grace Vegetable Oil and use to fry the diced tofu. Drain and set aside.
- Fry diced potatoes, drain and set aside.
- Pour 1/2 cup of the hot oil in a sauce pan and allow to heat. Add the mustard seeds and allow seeds to pop.
- Mix in the grated ginger, diced tomatoes, cumin seeds, hot pepper sauce and salt and cook for about 3-4 minutes. Mix in the turmeric powder and water and stir well.
- Fold in the fried tofu and Irish potatoes and allow to simmer for about 5 minutes.
To Serve: Serve with steamed Grace Brown Rice and a vegetable salad.
