- 1 packet Lasagna Noodles
- 4 tablespoons Grace Vegetable Oil
- 1 teaspoon salt
- 1 packet Grace Earth Chef Veggie Mince Beef
- 2 cloves garlic, chopped
- 2 stalks escallion, chopped
- 1 medium onion, chopped
- 1 medium green sweet pepper, large diced
- 1 medium tomato, chopped
- 0.5 teaspoon scotch bonnet pepper, chopped
- 1 packet Seasoning from Grace Earth Chef Veggie Mince Beef package
- 2 cups Grace Tomato Ketchup
- 4 cups steamed callaloo
- 1 cup mozorella cheese, shredded
- 1 cup natural cheddar cheese, shredded
- 0.25 cup breadcrumbs
- 1 teaspoon oregano
- 1 tablespoon parsley, chopped
Directions
- Boil lasagne noodles for 8-10 minutes in plenty boiling water to which 1 Tbsp. Grace Vegetable Oil and 1 tsp. salt has been added, then drain.
- Rehydrate Grace Earth Chef Veggie Mince Beef with 2 cups boiling water for 10 minutes.
- Heat a saucepan, add remaining Grace Vegetable Oil and saute the chopped garlic, escallion, onion, sweet pepper, tomatoes and scotch bonnet pepper, then fold in the re-hydrated Veggie Mince.
- Mix in the seasoning mix from the Earth Chef Veggie Mince package, and then mix in 1 or 2 cups Grace Tomato Ketchup.
- Combine the cheeses.
- Arrange a layer of callaloo, cheese, mince and four overlapping leaves of lasagna noodles, alternately.
- Repeat until ingredients are finished.
- Top with cheese, breadcrumbs, oregano and parsley.
- Bake in a pre-heated oven at 180°C/350°F for about 30-35 minutes or until golden brown.
TO SERVE: If desired, serve with a vegetable salad.
RECIPE NOTE: Saute - To fry briefly over high heat.
