Ingredients

For 4 people ()

  • 2 tablespoons Grace Vegetable Oil
  • 1 stalk escallion, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, chopped
  • 1 sprig thyme
  • 1 tablespoon Grace Caribbean Traditions Curry Powder
  • 1 can Grace Coconut Milk
  • 1 whole scotch bonnet pepper
  • 2 cans Grace Mackerel In Brine, drained
  • 4 whole pimento berries

Directions

  1. Chop seasonings except the scotch bonnet pepper and set aside.
  2. Heat Grace Vegetable Oil in a saucepan, add seasonings and saute.  Add Grace Caribbean Traditions Curry Powder and stir well.
  3. Stir in Grace Coconut Milk, add the whole scotch bonnet pepper and allow to boil for 10-15 minutes.
  4. Drain Grace Mackerel in Brine, flake largely and add to the reduced coconut sauce. 
  5. Stir in pimento berries and allow mixture to simmer for 5 minutes.

    To Serve: Serve with slices of boiled yam and fingers of boiled green bananas or your favourite starch.

    Recipe Note: Annatto may be substituted for curry powder.
