- 0.75 pound cake and pastry flour
- 0.5 teaspoon baking soda
- 0.5 teaspoon baking powder
- 2 teaspoon cinnamon powder
- 0.5 teaspoon salt
- 4 ounces Grace Hello Margarine
- 10 ounces granulated sugar
- 3 medium eggs
- 2 cups mango, peeled, pureed
- 0.5 cup dessicated coconut
- 0.5 cups raisins
Directions
- Sift together flour, baking soda, baking powder, cinnamon powder and salt.
- With an electric mixer, cream Grace Hello Margarine, sugar and eggs until light and fluffy.
- Fold the dry ingredients into the creamed mixture in three batches.
- Fold in the mango, raisins and two-thirds of the coconut.
- Scrape batter into the greased loaf pan and sprinkle on the remaining coconut.
- Bake in a pre-heated oven at 180°C (350°F) for 50 minutes.
- Allow to cool then decorate with glazed mango slices.
